My mom, being a country gril, would somethings make a rabbit stew on Easter. None of us younger kids knew but my older brother (who shot the rabbits) always had a smirk on his face at dinner.

The Church, being sly and politically savvy, adopted any number of pagan customs andsymbols to ensure the spread and adoption of Christianity. The death and resurrection of Christ being celebrated in Spring, at a time of rebirth in the Northern hemisphere, made good sense and baby bunnies, also symbolizing rebirth, were a good symbol to get the kiddies engaged. Over time, a pagan symbol coopted by the Church was again adopted by pagan commercialism to sell stuff.

Rabbits and chicks are a symbol of fertility. New birth in the springtime. The rising of Christ from death is new birth. The Catholic church aligned pagan traditions with Christian holidays on the calendar cleverly to appeal to converts.
