I have sprouted 10 year old wheat and pinto beans.
you do not know if your stored grain is hybred or not but it probably is, not to worry, just sprout it, put a cup of grain or beans in sprouter ,soak for 12 hours drain/rinse, after 36-48 hours inspect and remove the sprouted grains and plant,cook the rest.
grow the plants to seed, [they will not be very good for much except planting], next year grow them and select the edible plants seeds for next years seed, you now have viable non hybred seed,[thanks to steve solomon for the rsearch].
