Blue fish is my favorite. Most of the fish in our coastal waters are great. Not really big on freshwater fish, although I've grown to enjoy catfish when cooked right!!
Shoot, move, communicate!!
Fluke=Flounder
Freshwater - Trout and salmon
Salt water (in order) - Fluke & flounder, Weakfish (also called sea trout), small blues (under 3 pounds), cod, scrod, and some of the others in the cod family, but not ling
I like salmon and halibut about the same, just depends on what sounds better that day! I wish I could eat it more, but it is so expensive and hard to catch all-year round, even by the Columbia River in Oregon!
Fresh-- bluegill, salmon or crappie. Salt------ about anything out of the gulf is good.

Saltwater: Red Snapper that's what I caught the most of off a platform in the Gulf.
Freshwater: Mississippi farm raised catfish with Hush Puppies and Cole Slaw. I kinda like the pan size Brim and Crappie we get from the lakes around here. Honestly, any editable fresh fish that comes out of nice clean water is good eating.
yellowfin for saltys and crappy for fresh
Best I've ever had was catfish.
